What is the maximum size/weight for carry-on luggage and how many pieces are permitted?

For most airlines it is about 45 linear inches.
One or two pieces per seat are permitted under most circumstances. Following these restrictions ensures the comfort and safety of passengers and crew while preventing flight delays. The following policies are for passengers traveling in economy class:

United Airlines
You are allowed one carry-on bag. And carry-on bag dimensions should not be more than 9" x 14" x 22" (22 x 35 x 55 cm) (L x W x H) or 45 linear inches (112 linear cm). You should stow your carry-on luggage in carry-on compartments of the airplane, under a seat, or in an overhead compartment.

Air Canada
As per Transport Canada regulations, two pieces of carry-on luggage at a weight of up to 22lbs each (10kg) are permitted. The standard article dimensions should not be more than 9" x 15.5" x 21.5" (23 x 40 x 55 cm) (L x W x H). Personal items include a purse, briefcase, laptop or diaper bag and the personal article dimensions should not be more than 6" x 13" x 17" (16 cm x 33 cm x 43 cm).

British Airways
One carry-on luggage restriction has been removed in most UK airport, so you can now carry 2 pieces of hand baggage when traveling on all British Airways flights. The maximum size of the standard bag must not exceed 56 x 45 x 25 cm (22 x 17.5 x 9.85in) (including wheels, pockets and handles). You can also take one laptop-sized bag/handbag/briefcase with you.

Air New Zealand
Passengers can carry one piece of cabin baggage, which may not weigh more than 7kg (15lbs) and may not be larger than 115cm (45") (length + width + height) on jet services or 105cm (41") on Air New Zealand Link services.

Lufthansa
Economy Class passengers are only permitted one piece of hand baggage with a maximum weight of 8kg and a maximum dimension of 55 x 40 x 20 cm. The exceptions are foldable garment bags. They count as hand baggage up to a size of 57 x 54 x 15 cm.
